Step 1

In advance: Enlarge letter pattern to 5 1/2 in. Trace letter on back (shiny) side of Black Sugar Sheets! using black FoodWriter (reverse letter). Cut letter with scissors; repeat for a second letter. Sandwich letters over lollipop stick with piping gel, leaving 4 in. extending at bottom. Also: Make bows. Cut two 7 x 3/4 in. high red strips. Attach ends of each strip together at center with piping gel. Cut two 1 x 3/4 in. strips for knots. Wrap around center of bow and attach. Cut four red strips, 3 x 3/4 in. wide; cut one end on an angle and attach for streamers. Let dry.

Step 2

Bake and cool 2-layer cakes. Ice smooth and prepare for Stacked Construction. Using rotary cutter, cut 2 in. high damask strips, 19 in. long for 6 in. cake, 32 in. long for 10 in. cake. Attach around top edge of both tiers using piping gel. Cut 3/4 in. high red strips in same lengths and attach below damask strip on each cake. Cut 24 black strips each 1 1/4 x 1/8 in. wide and 1 1/4 x 5/8 in. wide. Attach strips vertically below red strips, placing 5/8 in. wide strips 1 1/2 in. apart, 1/8 in. wide strips centered between. Attach bows. Insert initial.
