In advance: Make heart. Tint 10 oz. fondant pink. Add 1/4
teaspoon Gum-Tex to 3 oz. Reserve remaining fondant. Roll
out 3/16 in. thick. Use pattern to cut out heart. Let dry 24 hours
on cornstarch-dusted board.
Also in advance: Prepare base board. Using 15 in.
petal pan as a guide, cut board. Prepare and cover with white rolled fondant.
Attach Cookie Stick to back
using melted candy; allow 3 in. of stick to extend at bottom
to insert into cake.
Tint fondant: 12 oz. blue 8 oz. green and 6 oz. orange; reserve
remaining white. Bake and cool 2-layer 6 in. and 8 in. cakes
and 3-layer 12 in. cake (for 6 in., trim layers to 1 1/2 in. high for a
3 in. high cake, for 12 in., trim one layer to 1 in. high for a 5 in.
Prepare and cover cakes with rolled fondant, then
prepare for Stacked Construction. Attach fondant trims
using damp brush. For heart, use Fabric Mold to make two
8 in. lengths of rick-rack trim and large flower button; attach.
For 6 in. tier, use mold to make eight large and 16 small buttons
in assorted colors; attach.
For 8 in. tier, roll out blue 1/16 in.
thick. Cut a 27 x 1 1/2 in. wide strip; attach at center. Use mold
to make green scalloped ribbons totaling 27 1/2 in. long; attach
over blue strip. Using piping gel method and your favorite font,
transfer message around green strip. Use buttercream and
tip 1s to cover marks.
For petal tier, roll out pink, green, blue
and orange fondant 1/16 in. thick. Cut 5 x 5 in. wide rectangles,
one in each color. Apply to four petals, leaving four petals in
between empty. Pipe tip 2 dots. For each remaining petal, use
mat to mold four assorted 5 in. lengths of rick-rack trim; attach,
about 1 in. apart. Pipe vertical lines between trims using tip 2.
For base board, use mold to make eight 6 in. strips of blue rickrack
trim; attach to edge with damp brush. Stack cakes. Use
buttercream to pipe tip 6 bead border around 6 in. tier and tip 8
bead border around 8 in. tier.
