Step 1

Preheat oven to 375°F. In large bowl, cream butter and sugar with electric mixer until light and fluffy. Beat in egg, coconut, and vanilla. Combine flour and baking powder; gradually add to creamed mixture. Mix just until combined. Place dough in cookie press and with desired disk press cookies onto ungreased cookie sheet. Bake 10-12 minutes or until edges are lightly browned. Cool on cookie sheet on rack 2 minutes; remove from cookie sheet and cool completely.

Rated 5 out of 5 by from Love this recipe. Great flavour and texture. Had a little difficulty getting some cookies out of the press but that is easily remedied by chopping the coconut finer. Good for dipping in dark chocolate.
