Step 1

Preheat oven 350°F. In mixing bowl, cream apple butter, butter and sugar together until light and fluffy. Add egg yolk, vanilla, cinnamon and mix. Mix in flour until blended. Roll dough into logs and fill cookie press. Using desired shapes, press cookies onto ungreased cookie sheet. Bake 10-12 minutes or until light golden brown. Cool 2 minutes on cooling grid. Remove from cookie sheet and continue to cool on grid.

Rated 4 out of 5 by from Good, could use some modifications I had some extra apple butter, so I thought this recipe would be a good chance to use some of it. I didn't quite have enough granulated sugar, so I used 1/2 cup brown sugar and 1/2 cup granulated white sugar. I also added extra cinnamon and put in ginger, and cloves. The cookies are slightly chewy because of the brown sugar and there is a delicate apple flavor. For all the spices I added, the flavors are still pretty subtle. The cookie is also not overly sweet. It needs something extra, but I'm having trouble figuring out if it's more sugar, spice, or both that it needs. Would be excellent with some dulce de leche.

Rated 4 out of 5 by from Made a few adjustments but what a great cookie! Made a few adjustments to ingredients. Changed 1 cup granulated sugar to 1/2 cup granulated sugar and 1/2 cup brown sugar. Changed 3/4 t cinnamon to 1 t cinnamon and 1 t apple pie spice. Kept all other ingredients the same. Sifted flour together with 1 t cinnamon and 1 t apple pie spice. Followed all original directions for creaming butter, apple butter and sugars together. Blended all ingredients together with hand mixer. Additionally buttered the cookie sheet and stuck it in the freezer for about five minutes before pumping cookies onto it to bake. The result was amazing! It is definitely not a traditional spritz cookie as the brown sugar caused the cookies to be a bit chewier but amazing flavor and great if you're looking for a softer version of a spritz!!

Rated 2 out of 5 by from Not at all like the spritz cookies I've made before. Taste is ok but, as others have stated, the texture is off and the cookie is tough. Will try increasing the fat to apple butter ratio next time.
