

No-Bake Chocolate Raspberry Cheesecake Shots

Ingredients
3-1/4 cups crushed chocolate wafer cookies
3/4 cup butter, melted
6 oz. cream cheese, softened
1/2 cup confectioners' sugar
3 tablespoons heavy cream
3 tablespoons raspberry preserves
Fresh raspberries, for garnish
Chocolate syrup, for garnish

- In medium bowl, combine cookie crumbs and butter; mix well. Press into silicone shot glass mold cavities. Freeze at least 1-2 hours and remove from mold. (May be made 1 day in advance).
- For filling, combine cream cheese, confectioners’ sugar, heavy cream, and raspberry preserves and beat until mixture thickens, about 2 minutes. Pipe or spoon mixture into shot glasses. Top with raspberries and chocolate syrup, if desired.
