Sometimes after a big meal, there's just no room for dessert. Thankfully, this No-Bake Chocolate Raspberry Cheesecake Shot recipe is just a little taste of something sweet! The shot glass is made using crushed cookies, then is filled with a raspberry-flavored cheesecake filling. Top your dessert shots with a little raspberry and a drizzle of chocolate syrup for a tasty end to your meal.

Ingredients

  • 3-1/4 cups crushed chocolate wafer cookies

  • 3/4 cup butter, melted

  • 6 oz. cream cheese, softened

  • 1/2 cup confectioners' sugar

  • 3 tablespoons heavy cream

  • 3 tablespoons raspberry preserves

  • Fresh raspberries, for garnish

  • Chocolate syrup, for garnish

  • Tools

  • Round Silicone Shot Glass Mold, 8-Cavity

  1. In medium bowl, combine cookie crumbs and butter; mix well. Press into silicone shot glass mold cavities. Freeze at least 1-2 hours and remove from mold. (May be made 1 day in advance).
  2. For filling, combine cream cheese, confectioners’ sugar, heavy cream, and raspberry preserves and beat until mixture thickens, about 2 minutes. Pipe or spoon mixture into shot glasses. Top with raspberries and chocolate syrup, if desired.
