1. - Make filling. Prepare two boxes pudding mix, using 3 cups milk instead of 4. Chill until set.
2. - Bake eclairs. Prepare éclair dough following recipe instructions. Prepare decorating bag with tip 1A and prepared dough. Pipe twelve 4 in. lines on parchment paper-covered cookie sheet. Bake and cool.
3. - Fill eclairs. Prepare decorating bag with tip 230 and prepared pudding. Fill cooled eclairs.
4. - Make glaze. Make chocolate glaze following recipe instructions. Dip top of eclairs in glaze, transfer to cooling grid. Let set, about 10 to 20 minutes.
5. - Make icing. Prepare buttercream icing following recipe instructions. Using cocoa powder, tint icing brown (sprinkle powder in about 1 teaspoon at a time until desired color is achieved).
6. - Decorate eclairs. Prepare decorating bag with Easy Blooms tip and buttercream icing. Pipe five flowers on each éclair.
