Step 1

Preheat oven to 375°F. Cream butter and sugar. Beat in eggs and vanilla. Add flour, baking powder and cocoa, one cup at a time, mixing well after each addition. If dough is too soft, add enough flour to make a stiff dough. Do not chill. Cut patterns, transfer dough pieces to ungreased cookie sheet with spatula. Bake 8-10 minutes, cool.

Rated 4 out of 5 by from This recipe makes a simple, easy to work with dough that is very forgiving of repeated rolling and rerolling of scraps. It would be ideal for children to work with because it does not need to be chilled and stays very stable with a lot of handling. The dough is best rolled thicker than usual in order to ensure a nice, uniform cookie without shape distortion during lifting or during baking. Even with the added thickness, I did not need to increase the baking time. I agree with the comment of user "hartleyflats" about the dryness of the cookies. They definitely depend on icing or filling to compensate for their dryness. In my second batch, I increased the butter by 1 tsp. just to see if it would make a difference, but it did not. I will definitely use this recipe often!

Rated 5 out of 5 by from I love using this recipe...I make sandwich cookies by rolling the dough a little thicker, baking a tad longer and putting buttercream between two cut-outs. You can sandwich any shape cookie. This recipe is a keeper!!
