Rated 5 out of 5 by AngelCollector from To celebrate Valentine's Day I had to make a cheesecake! I used a recipe from Rachel Ray's website, but I changed it to make it my own. The recipe was Chocolate Chip Tiramisu Cheesecake. I used my Wilton 9" Perfect Springform pan. The recipe called for Italian-style Ladyfingers, but I couldn't find them where I live so I used chocolate cookies without the cream centers, and added instant espresso powder to them as recipe called for, along with 6Tablespoons of butter. I learned to wrap the outside of springform pan with foil to bake cheesecakes in a water bath (*see hint below) then I lined the bottom of pan with parchment paper so I could slide the cheesecake off easily to serve on a beautiful vintage plate. The filling didn't call for the instant espresso powder but I added 1Tablespoon to give the recipe extra flavor. I also didn't use regular sugar, I used generic Splenda sugar substitute since my friend is diabetic. After it was cooled completely I melted dark chocolate pieces and put them in a zipper baggie, snipped the corner off and drizzled zigzag lines on the top. No traditional hearts here, it had to be different. I don't have a decorating set so that's why I used the zipper baggie. This came out of the pan perfectly, no sticking on the sides at all, and the recipe came out perfectly! I'm working on a new recipe right now! I love my Wilton Perfect Springform pans! They are top notch quality! Allows me to create my very own cheesecakes! This cheesecake came out so beautifully it looked professional my friend said! So I took pictures of it! I'd ad one to this review if I new how to post a picture on here LOL! I love Wilton products! Allows for personal creation of the best food! I'm creating a cupcake recipe for Easter! And of course I will use Wilton cupcake pans! Thanks Wilton!! *HINT: Bake cheesecakes in a roasting pan with about 2" of water, after baking for about 1hour, cool in water bath for 20minutes to keep the cheesecake from cracking. Then remove from water bath and place on cooling rack to cool completely. Refrigerate for at least 6hrs. Then decorate as you like.
