Make cookies 1 day in advance. Prepare and roll out dough following recipe directions. Use cutters in set to cut shapes. Bake and cool cookies.
Cover cookies with fondant. Use 9 in. fondant roller with pink guide rings to roll out black fondant 1/16 in. thick. Use cutters in set to cut out shapes to match cookie shapes. Attach fondant shapes to cookies with brush and piping gel. Let dry 24 hours.
Decorate cookies. Attach icing decorations on cookies with dots of piping gel. Melt white candy melts according to package directions. Fill a disposable decorating bag with melted candy, cut approximately 1/4 in. off tip if bag. Pipe approximately 20 lines of candy, 2 in. long, on parchment paper-covered cake board. Refrigerate to set, about 10 minutes. Use candy sticks to write messages and make designs on cookies.
