Caprese Chicken with Parmesan Garlic Asparagus Recipe

If you’re looking for a fast and easy one-pan meal, this recipe was made for you. Just season the chicken breasts, top them with some fresh mozzarella, then place them on the pan with the seasoned asparagus. Then you just put it all in the oven to bake. When it’s done, top the chicken with the tangy tomatoes mixed with vinegar and olive oil and you’ve got a delicious meal that’s sure to become a quick weeknight favorite.

Step 1

Preheat oven to 400°F.

Step 2

In small bowl, combine olive oil, 1/2 teaspoon salt, pepper and oregano. Rub mixture evenly over chicken and place on pan. Top each with 1 piece mozzarella.

Step 3

Lay asparagus opposite chicken and evenly sprinkle with minced garlic and parmesan. Drizzle with 2 tablespoons of olive oil.

Step 4

Bake 22-27 minutes or until chicken reaches 165°F and asparagus is tender. While meal is cooking, prepare tomatoes. In medium bowl, combine tomatoes and chopped basil with balsamic vinegar, remaining 1 teaspoon olive oil and remaining 1/4 teaspoon salt. When finished, top chicken with tomato mixture and serve immediately.
