Cappuccino buttercream is a perky mix of instant coffee and cream - perfect with any kind of chocolate cupcakes. Amp up the coffee flavor and pair this espresso buttercream with mocha cupcakes.

Ingredients

  • 1/4 cup milk

  • 2 tablespoons instant coffee granules

  • 1 1/2 teaspoons vanilla extract

  • 1/2 cup solid vegetable shortening

  • 1/2 cup butter, softened

  • 5 cups powdered sugar (confectioner's sugar)

  1. In a small bowl, combine milk, instant coffee and vanilla
  2. In a large bowl, beat shortening and butter with an electric mixer on medium speed until light and fluffy.
  3. Gradually add sugar, one cup at a time to butter mixture, beating well on medium speed. When all sugar has been mixed in, frosting will appear dry. Scrape sides and bottom of bowl often.
  4. Beat in milk mixture and continue to beat at high speed until light and fluffy.

Notes

    • Keep frosting covered with a damp cloth until you are ready to decorate. For best results, keep the frosting bowl in the refrigerator when not using. Re-whip before using.
    • This buttercream recipe can be made with decaf or full-caff instant coffee granules. It just depends on how much of a kick you are looking for!
    • To store: Frosting should be stored in an airtight container in the refrigerator for 2 weeks and can be frozen for up to 6 weeks. Bring back to room temperature and re-whip before using.
