Ingredients
3 envelopes (3/4 ounce each) gelatin
1 cup water, divided
1/2 cup Wilton Glucose Syrup
2 cups granulated sugar
1 cup sweetened condensed milk
12 oz. Bright White Candy Melts Candy
White White Icing Color
Wilton Gel Icing Colors
Color Right Performance Food Coloring Set

- In large bowl, combine Candy Melts candy and sweetened condensed milk. In small bowl, combine gelatin and 1/2 cup water. Let sit 5 minutes to soften.
- In medium saucepan, combine glucose, sugar and remaining 1/2 cup water. Cook over medium heat, stirring until sugar dissolves. Continue cooking until mixture comes to boil; remove from heat and add gelatin mixture. Stir mixture until dissolved. Pour hot sugar mixture over candy melt mixture and stir until candy is melted.
- Using an immersion blender, food processor or blender, process glaze until smooth. Strain mixture through mesh strainer to remove any air bubbles. Divide mixture into 3 parts and add icing color, gel color or Color Right Base Colors to customize. Let glaze cool to between 90°F and 96°F before pouring over cake or desired treat.

Notes

If using a buttercream-covered cake, the cake should be frozen before covering in mirror glaze. Do not remove cake from freezer until just ready to glaze.
