Make bunny ears one day in advance. For each set of three pairs of ears, use 9 in. fondant roller with pink guide rings to roll out 1 oz. gum paste 1/16 in. thick. Use craft knife to cut out pairs of ears, each 5/8 in. wide x 2 in. long tapering one top ends.
Use rose icing color to tint 1/2 oz. white gum paste. Use fondant roller with pink guide rings to roll out rose gum paste 1/16 in. thick. Use craft knife to cut out pairs of inner ears, each 1/2 in. x 1 1/4 in. tapering top ends.
Use damp brush to brush back of inner ear pieces and attach to ears, aligning bottom edges. Let dry overnight on cornstarch-dusted board.
Dip marshmallows. Melt white Candy Melts candy according to package directions. Dip lollipop stick in melted candy and insert lollipop stick into marshmallow. Place in Pops Decorating Stand and chill to set, about 3 to 5 minutes.
Dip whole marshmallow in melted candy, tap gently to remove excess. Place in stand and chill to set, about 10 to 15 minutes.
Add details. Use scissors to cut mini marshmallows in half. Use melted candy in cut parchment bag to attach cut side of mini marshmallows to lower portion of marshmallow side to form cheeks.
Use melted candy in cut parchment bag to attach pink Sugar Pearl nose and candy eyeballs. Place in stand and chill to set, about 3 to 5 minutes.
Dip bottom of ears in melted candy and hold on top of marshmallow until set. Place in stand and chill to set, about 3 to 5 minutes.
It's easy to accent dipped candy with fun toppings. Immediately after dipping, roll the candy in your favorite topping and refrigerate. Chopped nuts, Wilton Sprinkles and Nonpareils, shredded coconut or cocoa powder are delicious choices.
