Dip apples. Soak apples in lemon-lime soda for 10 to 15 minutes; remove from soda and dry completely. Melt light cocoa and white Candy Melts candy, separately, according to package directions. Use tongs to dip slices into melted light cocoa candy. Tap to smooth and remove excess candy. Place wedges on parchment paper-covered cake board. Chill until firm, about 10 minutes.
