The melding of flavors - chocolate cake, ganache, bourbon, cherries and buttercream icing - creates a decadent treat made more delicious with the addition of Limited Edition Cherry Cordial Candy Melts candy. It's the perfect over-the-top treat to show off your baking skills.
Preheat oven to 350°F. Prepare muffin pan with baking cups.
In large bowl beat cake mix, bourbon, water, oil and eggs at low speed 30 seconds. Scrape bottom and sides of bowl; beat at medium speed 2 minutes. Fill baking cups 2/3 full with batter.
Bake 18-20 minutes or until toothpick inserted in center of cupcake comes out clean. Cool cupcakes in pan on cooling grid 5 minutes. Remove from pan; cool completely.
Melt Cocoa Cherry Candy Melts candy according to package instructions. Divide melted candy equally into 2 bowls.
For icing, beat butter and shortening in large bowl with electric mixer until light and fluffy. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Slowly add 2-3 tablespoons bourbon; beat at medium speed until light and fluffy. Add half the melted candy; beat until well combined, scraping bottom and sides of bowl often. For ganache, heat cream until steaming; whisk into second bowl of melted candy until well combined
To assemble: Cut a hole approximately 1/2 in. wide x 1/2 in. deep with paring knife in the top of each cupcake. Drop 1 cherry into each hole and top with melted ganache. Let sit until ganache firms up, about 3-5 minutes. Dip tops of cupcakes in melted ganache, shaking off excess. Ice with buttercream.
