Two days in advance: Make 15 small gum
paste daisies with tinted rose centers on wires
following instructions from Gum Paste Flower
Cutter Set. Make extras to allow for breakage.
Also in advance: Prepare and cover base board with fondant. Tint 18 oz. fondant rose to match gum
paste daisy centers; cover board. Reserve
remaining fondant for flower centers on cake.
Bake and cool 2-layer cakes (bake two 2 1/2 in.
high layers for 5 in. high tiers). Tint chocolate
fondant black. Roll out all fondant 1/8 in. thick as
needed. Prepare and cover cakes with black
fondant; reserve excess. Prepare cakes
for Stacked Construction.
Cut 1/4 in. wide
strips (19, 26 and 32 in. long); use damp brush
to attach for bottom borders. Roll out white
fondant. Cut 88 daisies using small daisy cutter
from set. Attach 22 to 6 in., 30 to 8 in., 36 to 10 in.
cakes. Roll out reserved rose fondant. Cut flower
centers using narrow end of tip 12; attach. Brush
globe with Piping Gel and cover with black
fondant, leaving holes clear. Trim globe pillar
to 7 1/2 in.; insert in center of 6 in. cake. Fill pillar
with fondant to stabilize daisies. Slide globe
onto pillar. Insert gum paste daisies and arrange
