Can you think of anything better than a blueberry muffin in the morning? Well, maybe an extra hour of sleep. When you do wake up, the delicious scent of these streusel-topped sweets will have you jumping out of bed with a smile.
Preheat oven to 375°F. Prepare pan cavities with vegetable pan spray.
To make streusel, stir together flour and sugar in small bowl. Add melted butter; stir until mixture feels like wet sand.
For muffins, whisk together flour, sugar, baking powder and salt in medium bowl. In large bowl, whisk together melted butter, eggs, milk and vanilla. Add flour mixture; stir until just lumpy. Gently fold in blueberries. Divide batter evenly into pan cavities. Evenly divide streusel on top.
Bake 18-20 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes before removing.
