Blueberry Oatmeal Muffins Recipe

Step 1

Preheat oven to 350°F. Prepare 12 cavity muffin pan with baking cups.

Step 2

In small bowl, combine 1/2 old fashioned oatmeal, ground cinnamon, brown sugar, butter and flour. Stir until mixture is sandy; set aside.

Step 3

In large bowl, combine buttermilk, eggs, vegetable oil and vanilla. Stir in oats; let soak 15 minutes.

Step 4

In medium bowl, stir together 1 1/2 cups flour, sugar, baking powder, baking soda, cinnamon and salt. Pour dry ingredients into wet ingredients; mix just until flour is moistened. Gently fold in blueberries. (Do not overmix.) Divide batter evenly into prepared pan. Sprinkle streusel over tops.

Step 5

Bake 16-19 minutes or until toothpick inserted in center of muffin comes out clean. Cool 15 minutes in pan. Remove from pan to cooling grid. Serve warm or at room temperature.
