Perfect for a wedding shower or anniversary celebration, this blue fondant-covered, 2-tiered cake has a cascade of blossoms on top and blossom pattern on the bottom. Use the Wilton Blossom Double Cut-Outs Set to easily cut out the flower shapes.

Step 1

Cover cake base with fondant 3 days in advance. Tint 44 oz. fondant blue. Use fondant roller with orange guide rings to roll out 12 oz. blue fondant 1/8 in. thick. Cover base with blue fondant. Reserve remaining blue fondant.

Step 2

Make cupped blossoms 3 days in advance. Use fondant roller with blue guide rings to roll out 4 oz. blue fondant 1/16 in. thick. Use straight side of second largest (2 3/8 in.), third largest (2 in.) and second smallest (1 1/4 in.) blossom cut-outs to cut one blossom from blue fondant. Use straight side of smallest (7/8 in.) blossom cut-out to cut three blossoms from blue fondant.

Use crinkled side of third largest (2 in.), third smallest (1 5/8 in.) and smallest (7/8 in.) blossom cut-outs to cut one blossom from blue fondant.

Let all blossoms dry on cornstarch-dusted flower forming cups overnight.

Step 3

Assemble layered blossoms 2 days in advance. Prepare thinned fondant adhesive following recipe directions. Use brush and thinned fondant adhesive to attach crinkled blossom on larger-sized straight blossom.

Use blue fondant to roll balls in graduating sizes, with the largest size 1/4 in. and then becoming smaller. Use brush and thinned fondant adhesive to attach balls to blossom centers. Let dry overnight. Reserve remaining blue fondant.

Step 4

Make layered cakes. Prepare batter following recipe directions. Bake and cool two 8 in. and two 6 in. cake layers. Prepare buttercream icing following recipe directions. Prepare, fill and stack 8 in. and 6 in. cake for 2-layer cakes, 4 in. high.Place cakes on cake circles. Use spatula and icing to ice cakes lightly.

Step 5

Cover cakes with fondant. Tint 18 oz. fondant light blue. Use fondant roller with orange guide rings to roll out light blue fondant 1/8 in. thick. Cover 6 in. cake with light blue fondant. Use fondant roller with orange guide rings to roll out reserved blue fondant 1/8 in. thick. Cover 8 in. cake with blue fondant. Reserve remaining blue fondant. Prepare cakes for stacked construction.

Step 6

Decorate cake. Stack cakes on cake base. Use fondant roller with blue guide rings to roll out reserved blue fondant 1/16 in. thick. Use straight side of smallest (7/8 in.) blossom cut-out to cut out 90 blossoms.

Use damp brush to attach small cut-out blossoms to 8 in. cake. Use brush and thinned fondant adhesive to attach cupped blossoms to side of 6 in. cake.
