Preheat oven to 350°F. Spray two 9" round pans with vegetable pan spray.
Prepare cake batter according to package directions using water, oil and eggs. Divide batter between two pans. Bake 25-30 minutes or until cake tests done. Cool 10 minutes; remove from pans and cool completely.
Whip cream with confectioners' sugar. Place one cake layer on cake circle or serving plate. Spread half the whipped cream on top; add layer of cherries. Add second cake layer; press gently. Spread remaining whipped cream on top; sprinkle chocolate curls in center and add remaining cherries.
Refrigerate until ready to serve.
