We?ve made birthday cake taste even better! The delectable flavor can be tasted in both the cupcakes and the delicious buttercream icing flavored with melted Limited Edition Birthday Cake Candy Melts candy. Plus, birthday parties are so much easier with cupcakes for each guest!
Preheat oven to 350°F. Line muffin pan with baking cups.
In large bowl, combine cake mix, water, egg whites and oil. Beat with electric mixer on low speed 30 seconds, scraping bowl frequently. Beat on medium speed 2 minutes. Fold in jimmies. Fill baking cups 2/3 full with batter.
Bake 18-20 minutes or until toothpick inserted in center of cupcake comes out clean. Cool cupcakes in pan on cooling grid 5 minutes. Remove from pan; cool completely.
In large bowl, beat shortening and butter with electric mixer until light and fluffy. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry.
Slowly add milk; beat at medium speed until light and fluffy.
Add melted candy and beat until well combined, scraping bottom and sides of bowl often. Ice cooled cupcake with 1M swirl.
