Summer Sun Beach Themed Cookies

Do you have visions of palm trees and gorgeous summer sunsets? Well then you're going to love these Summer Sun Beach Themed Cookies. Cute palm tree flip flop cookies and bright pink sunglasses cookies are super fun for beachside wedding favors—or would be great treats for a summer birthday or pool party. All steps should be done the day before, unless otherwise noted.

  1. Bake cookies.

    Prepare cookie dough following recipe instructions. Using flip flop and sunglasses cutters, cut out cookies. Bake and cool.

  2. Prepare royal icing.

    Prepare royal icing following recipe instructions.

  3. Decorate cookies.

    Flip Flop Cookies: Prepare decorating bag with tip 3 and full strength white color flow icing; outline cookies. Let dry 15 to 20 minutes.

    Using teal icing color, tint ¼ cup full strength color flow icing teal; thin to count of 10. Transfer to parchment bag; set aside.

    Thin 1 cup full strength color flow icing to count of 10. Transfer to parchment bag; cut small hole in tip. Flow in cookies.

    Cut small hole in teal icing bag. Immediately pipe palm trees on cookies. Using toothpick, drag leaves to form trees. Let dry 8 to 10 hours or overnight.

    Sunglasses Cookies: Using rose icing color, tint 1 cup full strength color flow icing rose. Prepare decorating bag with tip 3 and rose color flow icing; outline cookies. Pipe bottom of sunglasses handles; pat smooth. Let dry 15 to 20 minutes.

    Thin remaining full strength rose color flow icing to count of 10. Transfer to parchment bag; cut small hole in tip. Flow in cookies. Let dry 15 to 20 minutes.

    Thin ½ cup white full strength color flow icing to count of 10. Transfer to parchment bag; cut small hole in tip. Flow in eyeglass area. Let dry 8 to 10 hours or overnight.

    Reserve remaining full-strength color flow icing for later step.

  4. On day of, finish decorating cookies.

    Flip Flop Cookies: Using orange icing color, tint ¼ cup remaining full strength color flow icing orange. Prepare decorating bag with tip 5 and orange color flow icing; pipe straps on flip flops. Let dry, about 4 to 6 hours.

    Sunglasses Cookies: Thin small amount of orange and goldenrod Color Dust, separately, with lemon extract. Using decorating brush, paint yellow at bottom of eyeglass section of cookie and orange on top, blending colors together in the middle. Using black FoodWriter marker, draw palm trees.

Notes

  • Make a couple weeks in advance. These truffles can be made a couple weeks ahead and stored in a cool dry place, covered.

    Storing truffles: These can be stored at room temperature in a cool dry place away from temperature changes.

    Releasing truffles from silicone mold. Make sure truffles are cooled, then flex the mold back and forth for truffles to pop out.

    Melting Candy Melts Candy: Use a low temperature setting on the microwave. Melt candy melts candy for 2 minutes at 40% then stir and check consistency. Place back in the microwave for an additional minute then remove and stir.

    To thin Candy Melts Candy: Thin Candy Melts Candy by using EZ Thin. Add 2 tablespoons to 12 oz. melted candy, and stir until completely incorporated. If you’re using less than 12 oz. of melted candy, start with a small amount of EZ Thin, then continue adding until you achieve the correct consistency.

    You can also thin out your melted candy with solid vegetable shortening (2 tablespoons per 12 oz. bag). Do not use liquid vegetable oil, butter, milk, water or any other liquid to thin your candy. These will all cause your candy to break or seize, rendering it unusable. This can also happen if your candy is burned or overheated.
