Preheat oven to 375F. Spray muffin pan cavities with vegetable pan spray.
In medium bowl, whisk together flour, sugar, baking powder, and salt.
In large bowl, whisk together milk, butter, eggs and vanilla extract. Add flour mixture and stir until just moistened. Do not over mix.
Divide batter evenly into pan cavities (wells will be full). Divide mix-ins evenly among cavities, 2 tablespoons per cavity. Stir batter in each cavity to distribute mix-ins.
Bake for 22-24 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes before removing.
Mix-in your favorite filling suggestions: chocolate chips, blueberries or nuts.
