Step 1

Preheat oven to 375°F. Prepare 24 cavity muffin pan with vegetable pan spray.

Step 2

Brush ham slices evenly with a thin layer of mustard. Place 1 slice in each of the prepared pan cavities to form a cup, mustard side facing up. Crack an egg into each of the cups and sprinkle evenly with salt and pepper.

Step 3

Bake 14-16 minutes or until eggs have reached desired degree of doneness, rotating pan halfway through baking. Carefully remove from pan and sprinkle evenly with chopped chives. Serve warm.
