Apple sauce and chopped Fiji apples pack the punch of apple flavor in this moist loaf cake. A layer of sweet-spicy streusel flavored with cinnamon, nutmeg and brown sugar in the middle and more streusel on top melts-in-your mouth and adds crunch. Bake in a loaf pan for easy-to-cut and-serve portions.
Preheat oven to 325°F. Spray loaf pan with vegetable pan spray.
For streusel, stir together brown sugar, flour, cinnamon, nutmeg, and butter in small bowl.
In small bowl, combine flour, baking powder, baking soda and salt. In large bowl, beat butter and brown sugar with electric mixer until light and fluffy. Add egg and vanilla. Beat well. Add flour mixture in two additions alternately with applesauce, mixing until incorporated. Fold in apples.
Spread half of the batter in bottom of prepared pan. Sprinkle with half of the streusel mixture. Top with remaining batter, smoothing the top evenly. Sprinkle remaining streusel over top of loaf.
Bake 60-65 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove to cooling rack to cool completely.

Worth making!I found the loaf very moist and tasty. It was a lot of work for one loaf, so I think next time it will be worth the effort to double the recipe and make two loaves.
