Santa and his elves are sitting pretty as they finish off the gifts for this season! The dimensional figures are created by decorating our Globe Pillar Sets with dazzling details in fondant.

Step 1

Tint fondant. One day in advance, tint fondant as follows: 48 oz. light green, 6 oz. dark green, 28 oz. red, 2 oz. black, 10 oz. copper, 4 oz. orange, 4 oz. blue, 3 oz. yellow, 3 oz. violet, 2 oz. brown. Reserve 5 oz. white.

Step 2

Make package loops. One day in advance, knead 1/2 teaspoon Gum-Tex each into 3 oz. dark green fondant and 2 oz. red fondant. Roll out dark green fondant 1/16 in. thick. Use fondant trimmer to cut four strips, 1 in. x 6 in., for large package and four strips 3/4 in. x 3 1/2 in. for small package. Fold over each strip to form loops, attaching ends with damp brush. Let dry on sides, supporting openings with cotton balls. Roll out red fondant 1/16 in. thick. Cut four strips, 3/4 in. x 3 1/2 in. for small package. Make loops and let dry on sides as above.

Step 3

Make Santa and four elves. For Santa, tape top hole of both 2 1/2 in. globes closed. Roll out copper and red fondant 1/8 in. thick. Cut out a 6 in. circle in each color. Use piping gel to attach circles to globes for head and body; smooth with hands. Cut fondant away from bottom holes.

For elves, do not tape holes in globes closed. Roll out copper, yellow, violet orange and blue fondant 1/8 in. thick. Cut out four circles, 4 in. dia., in copper for heads and one each in other colors for bodies. Attach; cut fondant away from bottom holes.

Step 4

Decorate Santa. For belt, roll out black fondant 1/16 in. thick. Use fondant trimmer to cut a strip 1/4 in. x 8 in.; use damp brush to attach around center of body.

For buckle, roll out yellow fondant 1/16 in. thick. Use fondant trimmer to cut a square, 1/2 in. x 1/2 in. Use knife to cut a square, 1/4 in. x 1/4 in. from center. Use damp brush to attach buckle to belt.

For arms, roll two red logs, 7/8 in. long x 1/2 in. dia. Use damp brush to attach to body. For cuffs, roll out white fondant 1/16 in. thick. Use knife to cut strips 1/4 in. x 1 in.; attach around arms. For mittens, roll two dark green balls, 1/2 in. dia.; shape with fingers and attach. For boots, roll two black balls, 3/4 in. dia.; shape with fingers and attach.

For hat, roll a red ball, 1 1/2 in. dia. Shape with fingers and attach to head. For pompom, roll a white ball, 1/2 in. dia; attach. Roll a small copper ball for nose, two flattened black balls for eyes and two white balls for eye highlights. Use damp brush to attach.

For hair, roll out white fondant 1/16 in. thick. Cut a strip, 1 1/2 in. x 3 1/2 in.; attach to back of head. For beard, cut a white strip, 3 in. x 4 in. Use knife to cut scallops at bottom edge. Cut an oval for face area at top center of strip, 1 1/2 in. x 1 3/4 in.; attach. For mouth, roll a black ball, 3/16 in. dia.; attach. For mustache, roll two white balls, 1/2 in. dia.; shape into teardrops and attach. For eyebrows, roll two white balls, 1/4 in. dia.; shape into teardrops and attach. For hatband, roll out white fondant 1/8 in. thick. Cut a strip 1/2 in. x 7 in.; attach. Use knife to cut pillar to 5 in. Assemble head and body on pillar.

Step 5

Decorate elves. For pants, roll out yellow, blue, red and orange fondant 1/8 in. thick. Use fondant roller to cut a strip 1 1/2 in. x 6 1/2 in. Use damp brush to attach a contrasting color strip around bottom half of each body.

For suspenders, cut two strips, 1/4 in. x 3 in. to match pants; attach. For pointed collars, roll out dark green and white fondant 1/16 in. thick. Use largest Cut-Out to cut one daisy in each color. Attach collar to top of body; cut fondant away from top hole.

For arms, roll two logs to match each shirt color, 1 1/2 in. long x 3/8 in. dia. Use damp brush to attach to body. For shirts with collars, use small daisy cutter to cut cuffs to match collar; attach. For hands, roll two copper balls, 3/8 in. dia. Shape with fingers and attach. For bow ties, roll two balls, 1/4 in. dia. to match suspenders; shape into teardrops and attach. For knots, roll a ball, 1/8 in. dia.; attach.

Roll a small copper ball for nose, two flattened black balls for eyes and two white balls for eye highlights. Use damp brush to attach. For mouth, roll a black log, 3/4 in. long x 1/16 in. dia.; attach. For hair, roll out brown, yellow and red fondant 1/16 in. thick. Use scissors to cut and shape hair as desired or, for strands of hair, roll fondant logs, 1/8 in. dia. x 2 in. long. Attach with damp brush.

For ears, roll two copper balls, 1/4 in. dia.; shape with fingers and attach. For each hat, roll a ball, 1 1/2 in. dia. to match shirt color. Shape into a teardrop, 2 3/4 in. long. Flatten wide end and roll out to 2 1/2 in. x 2 1/2 in. Attach hats to top of head; cut fondant away from top hole. For hatband, roll out white fondant 1/16 in. thick; cut a strip, 1/4 in. x 7 in.. Attach. For pompom, roll a white ball 3/8 in. dia.; attach.

Step 6

Prepare cakes. Bake and cool 2-layer cakes. Trim one layer to 1 in. high for 3 in. high cakes. Place 10 in. cake on foil-wrapped board. Prepare cakes for rolled fondant. Cover 6 in. cake with light green fondant.

For 10 in. cake, cut an 11 in. square cake board; wrap with Fanci-Foil. Position cake. To make a template for positioning fondant squares on cake top, cut out a 10 in. square cake board and remove a 5 in. square corner. Position board on cake top. Roll out light green fondant 1/8 in. thick; position over open corner of board. Use knife to cut out fondant section to fit over top and sides of cake; smooth. Repeat for remaining sections of cake, making a second light green and two red sections.

For ribbons, roll out dark green and red fondant 1/16 in. thick. Cut four green and four red strips, 3/4 in. x 8 in. Use damp brush to attach ribbons in contrasting colors, attaching a whole ribbon, then cutting the second ribbon to fit.

Step 7

Assemble cakes. Use knife to cut four pillars to 7 in. Use 8 in. separator plate as a guide for positioning pillars, following assembly instructions. Insert pillars in seam between colored gift sections. Position elf bodies and heads over pillars. Position separator plate and 6 in. cake.

For 6 in. cake ribbon, roll out dark green fondant 1/16 in. thick. Use fondant cutter to cut four strips, 1 in. x 6 in.; attach, trimming to fit. Insert Santa. Use damp brush to attach bow loops to both cakes.
