Step 1

Melt candy melts according to package directions.

Step 2

Allow coating to cool slightly, stirring occasionally (don't let it set up).

Step 3

In a mixing bowl, beat the cream cheese (preferably with a flat beater) until smooth and creamy.

Step 4

Gradually beat in the cooled coating until blended and smooth.

Step 5

Beat in the butter and lemon juice.

It is important to make sure the white chocolate and butter combine together and are stirred up smoothly, otherwise the butter separates and gets oily. As long as they are mixed good together and stirred constantly, the recipe should come out perfectly. I've tried it on several cakes and it works every time.

Add a teaspoon more or less or almond extract and a half cup of powder sugar and viola...a new taste, I had to try all 5 colors I mixed up and each was better than the last:) I highly recommend this recipe. thanks.

The candy melts are so easy to work with and make the icing so smooth. The flavor is great too! A perfect compliment to a rich flavored cake such as Red Velvet.

Rated 5 out of 5 by from I had some difficulties with this icing, I followed the exact recipe and i dont know if the texture was as it should be. I got a very liquid icing and when i put the cake at the fridge this turned like a chocolate cover! it was weird lolol but the flavor is wonderful!!!

Rated 5 out of 5 by from Love this icing!! Tastes great!! I do add a little powdered sugar to it to thicken it up more when using it for a cake that I am going to decorate, and I don't put the lemon juice in it. I have used it on a white chocolate cake and also on a cookies and cream cake.

Rated 5 out of 5 by from This was the best icing, who doesn't love cream cheese and white chocolate? I put it on a two layer strawberry cake with strawberry preserves filling and dipped fresh strawberries in white chocolate for the decorations on top. This was to die for.

Rated 5 out of 5 by from This icing is great and everyone I make it for say they can eat it alone with out the cake. I like to use orange juice instead of lemon to cut out the zing. It's also great as a dip for fruit!!!
