Step 1

3 days in advance: Make flowers. Mix 16 oz. fondant with 16 oz. gum paste (reserve excess mixture for base panels). Roll out 1/16 in. thick. Cut 19 flowers using largest Cut-Out. Dry in 3 in. flower forming cups. Cut 25 flowers using medium Cut-Out. Dry in 2 1/2 in. cups. Cut 225 flowers using smallest Cut-Out. Dry on wave flower formers. Make extras to allow for breakage.

Step 2

Also: : Make base panels. Roll out reserved fondant/gum paste mixture 1/8 in. thick. Cut four panels each 2 1/2 in. x 17 1/2 in. wide. Use knife to equally trim ends at an angle leaving a 14 1/4 in. wide top edge. Let dry on cornstarch-dusted boards.

Step 3

And: Prepare and cover base boards with 90 oz. fondant, including reserved mixture.

And: Decorate flowers. Use royal icing to pipe tip 1 outline on petals of all flowers. Let dry.

Step 5

Bake and cool four 3-layer cakes (trim one layer to 1 in. high for 5 in. high cakes). Prepare and cover with rolled fondant. Prepare bottom cake for push-in pillar construction; set on 20 in. base board. Using royal icing, attach angled base panels to bottom tier, positioning 17 1/2 in. edge on board 2 1/4 in. from cake. Pipe tip 2 lines over corner seams. Beginning at the center, pipe tip 2 lines 1/4 in. apart at the top, gradually widening at the bottom to fill angle at corners. Attach 50 small flowers to each side above panels in a wavy pattern.

Step 6

Prepare top three cakes for stacked construction; position on 11 in. base board. Use piping gel with parchment paper to transfer side scroll pattern to sides of 6 in. cake. Use royal icing to cover marks with tip 1 swirls and random dots. Decorate sides of other three tiers with tip 1 clusters of 6-petal bead flowers, leaves, dots and swirls. Shape a fondant mound 2 in. x 5 in.; position on 6 in. cake. Use thinned fondant adhesive to attach seven large, 13 medium and 25 small flowers. Insert twist legs in marked areas. Attach 12 large and 12 medium flowers around legs, using fondant balls to vary angles. .

Step 7

At reception: Assemble cakes.
