Making the Cake
Leveling
Remove any crown which may have formed on your baked
cake using a serrated knife or a Wilton Cake Leveler.
This is a critical step and provides a perfectly level
cake for decorating. Otherwise your cake can crack after
decorating.
1. USING A SERRATED KNIFE
Place the cake on a cardboard cake circle, then
place on a Wilton Trim 'N Turn Turntable. While
slowly rotating the turntable, move the knife back
and forth across the top of the cake in a sawing
motion to remove the crown. Try to keep knife level,
and brush off all loose crumbs which can mix into
your icing. |

2. USING THE WILTON CAKE LEVELER
Start with cake on a cardboard cake circle. Measure the height you want to cut from your cake, then position the ends of the cutting wire into the side notches to reach that height. Keep legs of Leveler standing level on work surface and cut into the cake, using an easy sliding motion.
