Step 1

At least 2 days before decorating cake, make tip 129 light violet royal icing drop flowers with tip 3 dark violet dot centers and tip 24 light violet drop flowers with tip 2 dark violet dot centers on waxed paper-covered cake board (300 flowers were used for this project - make additional in case of breakage). Allow to dry completely.

Step 2

Bake your favorite 2-layer cake recipe or mix in square pan. Cool cake in pan on wire rack 10 minutes. Remove from pan and cool completely. Wrap cake board with foil. Arrange cake on prepared cake board.

Step 3

Spatula ice cake smooth with buttercream icing. Position flowers in clusters on cake top and sides, using additional buttercream icing if necessary.

Drop flowers are a great way to add flowers quickly. Pipe drop flowers in buttercream directly on your cake, or pipe in royal in advance and place your flowers anywhere. Flowers will be sharper in definition when piped in royal.

I always make more drop flowers than necessary, because there is always some breakage. There are usually some drop flowers left, which can be stored, and used on another project!

The flower clusters turned out wonderful, even though at that point I hadn't made many drop flowers before. I liked that the icing on the cake didn't have to be smooth either, yet it adds a unique dimension to this cake! I would recommend this cake for anyone who is a beginner cake decorator, or who is looking for a nice easy, yet sophisticated cake to make!
