Make cookies 2-3 days in advance. Prepare and
roll out dough. Cut using straight-edged tree cutter
from set; trim off trunk. Bake and cool cookies.
Outline cookies using tip 3 and full-strength
red icing; flow in with thinned icing. For
pompoms, using full-strength white icing, pipe tip
5 Puddle Dots, 1/2 in. diameter, on waxed
paper-covered board. Let both dry 24 hours.
Pipe icing details. Use full-strength icing and tip
5 to outline and fi ll in 1/2 in. deep face area; pat
smooth with fingertip dipped in cornstarch. Use
full-strength icing and tip 3 to outline beard. Using
thinned icing, flow in beard and pipe tip 5 outline
hat brim and bead mustache. Using full-strength
icing, pipe tip 3 dot nose and mouth, tip 1 outline
eyes; attach puddle dot to hat. Let dry 24 hours.
Flatten and shape green spice drops into 3/4 in.
long mittens; cut slit for thumb. Shape black spice
drop into 3/4 in. long shoes. Roll any cut areas in
granulated sugar. Use knife tip to poke holes in
spice drops. Insert 1 in. lengths of licorice, securing
with icing. Attach to back of cookie with fullstrength
icing. Let dry.
