Step 1

1 DAY IN ADVANCE

Make fondant hats. For each cupcake, tint 1 1/2 oz. fondant lemon yellow/sky blue combination (for lime green), a 1 in. ball kelly green, a 1 in. ball red-red/black combination (for dark red). Knead 1/4 teaspoon Gum-Tex into lime green.

Use 9 in. fondant roller with pink guide rings to roll out fondant 1/16 in. thick as needed. Use hat pattern and knife to cut out lime green hat. Place on cornstarch-dusted, parchment paper-covered boards. Use pattern to cut kelly green stripes. Use damp brush to attach. Use pattern and knife to cut dark red brim; attach. Use wide end of tip 1A to cut dark red pompom; use back of knife to score texture lines. Let all dry 24 hours.

Bake and cool cupcakes.

DAY OF CELEBRATION:

Ice cupcakes. Make buttercream icing following recipe directions. Use spatula to ice cupcake tops smooth.

Make fondant trims. For each cupcake, tint a 1/2 in. ball of fondant black, a 3/4 in. ball orange and a 1 in. ball red-red.

Roll out black fondant 1/16 in. thick. Use pattern and knife to cut out mouth; position on cupcake. Roll an orange ball, 3/4 in. dia. Shape into a cone for nose, 1/2 in. dia. at base x 1 1/8 in. high; attach. Roll a red ball, 1 in. dia. Shape into tongue, 1 in. wide x 1/4 in. thick x 1 in. long, with rounded front and straight back. Use tip 2 and white icing to pipe outline snowflake, 1/2 in. dia.

Melt red Candy Melts candy according to package directions. Use melted red candy in cut parchment bag to attach tongue to mouth; hold in position until set, 3 to 5 minutes.

Step 5

Assemble hat. Cut lollipop sticks to 3 in. long. Insert horizontally into cupcake at top of baking cup, leaving 1 1/4 in. extended to support hat; keep level. Brush stick with melted candy; immediately position hat and hold until candy sets, 3 to 5 minutes. Attach pompom with melted candy. Let set.
