Step 1

Two days in advance: Make fondant bushes. Tint 2 oz fondant green. Add 1/2 teaspoon Gum-Tex. Roll out 1/8 in. thick. Cut eight bushes with straight bottom and scalloped tops. Vary width and height from 1 1/2 to 2 1/2 in. Let dry for two days on cornstarch-dusted waxed paper-covered boards.

Step 2

Also, make 26 flowers: : Tint fondant: 1 oz. rose, 1/2 oz. yellow. Roll out rose 1/16 in. thick. Cut flowers using smallest Cut-Out. Place on Thick Shaping Foam and cup centers using ball tool from set. Roll 1/16 in. diameter yellow ball centers. Attach using damp brush. Let dry on waxed paper-covered board and cover to prevent fading.

Step 3

And, make five frogs: Tint fondant: 3 oz. lime, 2 1/2 oz. green, 1/2 oz. black. Grease Lollipop Mold with shortening. Press in fondant for frogs, then lily pads. Remove immediately. Use black fondant to roll tiny ball eyes and thin log smile. Attach using damp brush. Let dry two days on waxed paper-covered boards.

Step 4

Finally in advance, prepare castle: Tint fondant: 6 oz. gray, 20 oz. light gray; reserve 2 oz. white. Roll out 1/8 in. thick unless otherwise specified. Cover two small towers and one large tower with rolled light gray fondant. Brush towers with Piping Gel and then smooth on fondant with hands; trim edges as needed. Roll out some light gray fondant 1/16 in. thick. Cut about 38 bricks 1/4 x 3/8 in. wide; attach to towers using damp brush. Cover two small and one large turret peaks plus doorway peak with rolled dark gray fondant. Use smallest round Cut-Out to cut shingles; working from bottom to top, attach to cover turret peaks and doorway peak. Roll out white fondant. Use pattern from castle kit to cut three windows and one door. Score woodgrain using back of knife. Attach. Roll 1/2 in. long logs for door handles; shape and attach. Roll out some white to 3/8 in. thick. Cut a 1 x 1 1/2 in. wide bottom step; use knife to taper to 7/8 in. wide in the back. Cut a 5/8 x 1 1/2 in. wide top step; taper to 1 in. in back. Let dry. Make three flags. Cut 3/4 x 3 in. paper strips. Cut and remove triangle to form points at one end. Wrap strip around brush to curl ends in opposite directions. Trim Lollipop Sticks to 3 in. long. Attach flags with tape. Attach flags using extra fondant.

Step 5

Bake and cool 1-layer cakes. Tint fondant: 18 oz. light blue, 30 oz. light green (reserve 6 oz.), 36 oz. medium blue. Prepare and cover cakes with rolled fondant using light blue on 8 in. cake, light green on 10 in. cake and medium blue on 12 in. cake.

Step 6

For 8 in. cake: Roll out 10 oz. white fondant 3/8 in. thick. Cut nine assorted clouds, about 2 x 2 1/2 in. wide. Set on waxed paper-covered boards. Use fingers to flatten edges. Use Piping Gel in cut parchment bag to outline clouds. Immediately sprinkle on white Cake Sparkles; use dry brush to remove excess. Attach clouds to cake sides using damp brush; trim as needed to fit.

Step 7

For 10 in. cake: Roll out 24 oz. light green fondant 1/8 in. thick. For grass, tint 8 oz. fondant dark green. Roll out half 1/16 in. thick and cut a 32 x 2 in. high strip. Cut 1/4 in. wide slits for blades. Attach to cake sides. Bend some forward. Attach 16 flowers to cake sides using thinned fondant adhesive.

Step 8

For 12 in. cake: Roll out reserved light green fondant 1/8 in. thick for lily pad. Place fondant on 12 in. pan for sizing and cutting. Use straight edge of Cutter/Embosser to cut a lily pad shape about 1/3 to 1/2 size of the pan. Attach to back portion of 12 in. cake top. Roll out remaining dark green fondant 1/16 in. thick. Cut 1/4 in. wide blades of grass in various lengths. Attach to cake with damp brush, folding some ends forward. Tint fondant: 1 oz. brown. Roll 20 brown logs 1 x 3/8 in. for cattails; attach using damp brush. Roll 20 thin brown stems 1 to 1 3/4 in. long; attach. Cut a 2 x 2 1/4 in. wide paper sign; print message with black marker. Attach Lollipop Stick to back using tape.

At reception: Position castle and attach to cake using melted candy. Insert bushes, frogs and sign. ? Position topper. Attach flowers to bushes.

* Combine Leaf Green with Lemon Yellow for lime green shades for lily pads and frogs shown.
* Combine Christmas Red with Brown for brown shown.
* Combine Lemon Yellow and Golden Yellow for yellow shown.

? Always place a separator plate, or cake board cut to fit, on the cake where you position any figurine or topper. This protects both the cake and your keepsake. For extra stability, secure your figurine to the plate with double stick craft tape.
