Bake and cool 6 in. and 10 in. square cakes. Cakes are 4 in. high (two layers, 2 in. high). Prepare buttercream icing following recipe directions. Tint a portion black and set aside. Use 11 in. square head spatula to ice smooth in white. Prepare cakes for stacked construction.
Stack on cake pedestal.
Prepare and attach houndstouth Sugar Sheets! edible decorating paper. Measure width and height of all eight cake sides. Use black FoodWriter edible color marker to trace dimensions on shiny side of sheets. Use rotary cutter to cut sheets to size.
Place edible decorating paper shiny side down on parchment paper. Spray with blue Color Mist food color spray. Let dry 15 minutes. Working one section at a time, brush back with piping gel and attach sheet to cake sides. Trim edges if needed.
Cover seams. Use tip 2 and black icing to cover corner seams with beads.
DAY OF CELEBRATION
Position graduate. Insert two dowel rods in 6 in. cake top where graduate will stand. Mark level of cake top on rods and remove. Cut rods at mark and reinsert. Position graduate.
