Lovely flowers bloom atop this Spring Meadow Wedding Cake. Simple decorations and added height make this easy wedding cake suitable for other occasions, as well. Serve it at an engagement party or bridal shower, or use this cake design for a garden party treat or large birthday celebration. Since this cake has delicate decorations, it’s best assembled on site, so make sure to allot for extra time for assembly.
2 days in advance: Make flowers. Tint 2 oz. gum paste green; leave remainder white. Using cutter, small blossom ejector and instructions from gum paste set, make 122 white stephanotis flowers with green calyxes; use a 6 in. piece of thin spaghetti for stem rather than wire. Make extras to allow for breakage and let dry 24 hours in craft foam block. Paint stems with moss green icing color/lemon extract mixture. Let dry. Brush flowers with white Pearl Dust; let set.
Sponge bottom 2 in. of cakes with thinned buttercream in deep moss green. Thin buttercream
icing. Dampen a
new sponge and lightly dip into icing. Using
a quick pulling motion, blot icing on cake
surface to produce a spackled effect. Different
spackled effects can be achieved using
crushed waxed paper or paper towel.
Pipe tip 4 bead bottom borders.
At reception: Insert twist legs in 10 in. and 8 in. cakes. Insert 60 flowers in 10 in. cake, 40 in. 8 in. cake and 22 in 6 in. cake. Assemble cakes.
