Step 1

Preheat oven to 325°F. Prepare Skillet pan with vegetable cooking spray.

Step 2

In small bowl, stir together sugar, flour and cocoa powder.

Step 3

In large bowl, whisk together oil, milk, egg, and vanilla. Add flour mixture and stir until just combined. Pour into prepared pan and smooth top.

Step 4

Bake 24-26 minutes, or until toothpick inserted in center comes out nearly clean. Cool slightly. Top with ice cream, hot fudge and sprinkles.

Rated 4 out of 5 by from Not exactly a brownie... ...when baked for the specified amount of time, the middle isn't set, so this is more like a lava cake than a brownie. No matter. I have a couple of suggestions: first, this recipe calls for a high proportion of oil, so be sure to use a bland vegetable oil. I used sunflower oil and though my husband and I found it to be delicious, some people might consider the strong nutty taste to be overpowering. Extra virgin olive oil would be too strong, but a lower grade olive oil for baking would work well. Canola or soy would be good choices, too. Melted butter could probably be substituted for the oil. Second, I think this recipe could use a pinch of salt for a fuller flavor. Good recipe, the amount is just right for two people to finish in a single sitting and I will definitely make this again.
