Additional Information

Step 1

1 day in advance: Make candy plaque flower.

Pipe melted candy into cake pan using cut parchment bags; chill until firm after each addition. Use yellow candy for center, orange for petals. Chill until firm. Unmold onto soft cloth. Attach plastic dowel rod to back of flower with melted candy, extending 7 1/2 in. at bottom. Position coupler ring as a spacer between extended section of dowel rod and flower to create a slight gap; this will enable you to insert dowel rod in center post on cake without dislodging flower. Chill until firm. Remove coupler ring.

Step 2

Make flower stem. Brush tall center post from towering tiers set above wide ridge with melted green candy. Refrigerate until firm on waxed paper-covered board.

Step 3

Make candy leaves. Brush back of clean, dry lemon leaves with melted green candy. Refrigerate until firm. Carefully peel off leaves for reuse; you will need 90 candy leaves.

Step 4

Bake and cool 2-layer round cake and two mini ball cakes. Prepare round cake for towering tiers construction; ice cake smooth.

Step 5

Divide cake into 16ths, marking top and bottom. Attach feet, center post foot and short center post to 14 in. plate; position cake. Pipe a tip 1D (serrated side up) stripe at each division mark.

Step 6

For mini ball ladybugs, pipe tip 3 wing line. Cover cakes with tip 16 stars. Pipe tip 12 ball head. Pipe tip 2 outline mouth. Attach candy eyeballs and licorice antennae with icing. Pipe tip 2 dot antenna ends.

Step 7

Insert flower stem post into short center post. Attach candy leaves to base of cake with icing and to stem with melted candy. Insert flower into center post. Position ladybugs on cake top.

Leaves are an essential element used to showcase and frame your candy floral creations. Here's how to add a finishing realistic touch to all your flowers!

Characters or designs are often outlined first, then piped in with stars or zigzags. Outlines can also be used for facial features.

The star tip creates the most celebrated, easily accomplished decorations! The serrated edges of the star tip make ridges in the icing as you squeeze it out. Because fill in requires so much piping from the same bag, keep replenishing icing in bag.
