Step 1

1 day in advance: Make flowers. Use royal icing to pipe approximately 75 tip 16 drop flowers on parchment paper-covered board. Pipe tip 2 dot centers. Make extras to allow for breakage and let dry overnight.

Step 2

Bake and cool 2-layer 6 in. and 14 in. cakes and 3-layer 8 in. cake (bake three 2 in. layers for a 6 in. high cake). Ice smooth 6 in. and 14 in. tiers in yellow buttercream and 8 in. tier in white buttercream.

Step 3

Prepare cakes for stacked construction.

Step 4

Pipe tip 45 cornelli lace-look ruffle on 8 in. cake in white buttercream, holding narrow edge of tip against cake with remainder of tip upright from cake side.

Step 5

On 14 in. cake, pipe tip 127D ruffle bottom border. On 6 in. cake, pipe tip 8 bead bottom border. Attach drop flowers 1. in. apart on 6 in. and 14 in. cakes with tip 2 dots of buttercream. Position topper.

? Always place a separator plate, or cake board cut to fit, on the cake where you position any figurine or topper. This protects both the cake and your keepsake. For extra stability, secure your figurine to the plate with double-stick craft tape.

Drop flowers are a great way to add flowers quickly. Pipe drop flowers in buttercream directly on your cake, or pipe in royal in advance and place your flowers anywhere. Flowers will be sharper in definition when piped in royal.

The bead shape makes impressive borders outlines and accents on letters and designs; also a cute trim on clothing and gingerbread houses. The basis for making piped hearts and figure piping.

The random lacy design of this free-form technique depends on the continuous curving lines that do not overlap or touch. Can be used in a small design area or on an entire cake surface. Good for wedding, anniversary and other formal event cakes, but lends itself to more casual themes, as well.
