Mini Broccoli Quiches

Tools:

  • Snowflake Baking Cups
  • 12-cup Standard Muffin Pan

Ingredients:

  • 1 pkg (10 ounces) frozen broccoli cuts thawed and well-drained
  • 1 1/2 cups Colby or Colby-Jack cheese shredded
  • 3 eggs
  • 1 cup Milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper

Makes: Each quiche serves 1.

Preheat oven to 350°F. Put baking cups in muffin pan. Cut broccoli into 1/2-inch pieces.

Place broccoli and cheese equally among baking cups.

In large bowl, combine eggs, milk, salt and pepper; beat well.

Pour egg mixture into baking cups.

Bake 30-35 minutes or until filling is set.

Cool in pan on wire rack 5 minutes. Serve immediately.
