Spinach Ricotta Mini Pizzas

For Crust

  • 1 package (13.8 oz.) refrigerated pizza dough
  • 2 teaspoons olive oil

For Toppings

  • 1 cup part-skim ricotta cheese
  • 1/2 cup shredded Parmesan cheese, divided
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon crushed red pepper
  • 2/3 cup frozen chopped spinach, thawed and squeezed dry
  • Vegetable pan spray

Preheat oven to 400°F. Lightly spray star-shaped pan cavities with vegetable pan spray. Divide dough into 12 pieces.

Press dough into each prepared cavity. Use fork to prick dough; brush with olive oil. Bake 5 minutes. Cool slightly.

Mix ricotta cheese, 1/4 cup Parmesan cheese, garlic, salt and crushed red pepper. Top baked crusts with spinach and spoonfuls of cheese mixture. Sprinkle with remaining 1/4 cup Parmesan cheese. Bake 5-10 minutes or until cheese is melted and spinach is heated through.

Makes 12 mini pizzas.
