Light Chocolate Chunk Cookies |
Ingredients:
- 2 c. old fashioned oats, uncooked
- 2 c. all-purpose flour
- 1 t. baking soda
- 1/2 t. ground cinnamon (optional)
- 1/2 c. butter, softened
- 3/4 c. packed brown sugar
- 3/4 c. granulated sugar
- 1/4 c. apple butter
- 1 egg
- 1 egg white
- 1 t. vanilla
- 1 c. semi-sweet chocolate chunks
Preheat oven to 375°F. Place small amount of oats in blender container; process until smooth. Combine oats, flour, baking soda and cinnamon in a medium bowl; set aside. In a large bowl, beat butter and sugars until light and fluffy. Blend in apple butter, egg, egg white and vanilla. Add dry ingredients to sugar mixture; mix well. Stir in chocolate chunks. Dip with small cookie scoop; place 2 inches apart on ungreased cookie sheet. Pat down lightly. Bake for 10-12 minutes until lightly browned. Remove cookies to wire rack to cool.
YIELD: Makes about 4 dozen.
