Reduced Fat Banana Bread |
Ingredients:
- 1/4 c. butter or margarine, room temperature
- 1/3 c. honey
- 1/4 c. sugar
- 1 1/2 c. mashed ripe banana (about 3 medium bananas)
- 1/3 c. reduced fat sour cream
- 2 egg whites
- 1 t. baking soda
- 1 3/4 c. flour
- 1/2 c. reduced fat chocolate chips (optional)
Preheat oven to 350°F. Cream butter, honey and sugar. Blend in banana, sour cream and egg whites. In a separate bowl, whisk together baking soda and flour; stir into banana mixture. Fold in chocolate chips. Pour into a greased 9 x 5 loaf pan. Bake for 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes; cool completely on rack.
