American Cobbler is the perfect way to celebrate summer. Bursting with fruit—apples, pears, blueberries, and raspberries—and topped with pastry stars, this fresh dessert is welcome at any picnic.

1 teaspoon Sugar

1/2 teaspoon salt

1/2 cup shortening

5-6 tablespoons ice water

Pure Vanilla Extract
to brush on pastry

Red Colored Sugar

Blue Colored Sugar

4 Granny Smith apples peeled, cored and sliced

4 Bartlett pears peeled, cored and sliced

1 pint Fresh blueberries
-
1 pint Fresh raspberries

2 cups Sugar

2/3 cups Flour
-
2 tablespoons Lemon Juice

2 tablespoons Butter
-
1 cup walnuts chopped

2 tablespoons Confectioners' sugar
Makes: Cobbler serves 12.
instructions
Preheat oven to 350°F.
For pastry, combine flour, sugar and salt in medium
mixing bowl. Cut in shortening with pastry blender or steel blade of food processor
until mixture is crumbly. Add ice water, one tablespoon at a time, and mix with
a fork or food processor until mixture holds together in ball.
Roll pastry on
lightly floured board to 13 x 12 rectangle, about 1/2 - inch thick.
Cut out stars with Star Nesting Metal Cutter Set. Cover with clean cloth while
making filling.
For fruit filling, combine apples, pears, blueberries, raspberries
and lemon juice in large bowl. Combine sugar and flour and stir into fruit.
Spread fruit mixture evenly into pan. Dot with butter. Combine walnuts and confectioners'
sugar. Sprinkle over filling.
Top with pastry stars, brush with Pure Vanilla
Extract and sprinkle with Red and Blue Colored Sugars.
Bake for 60 to 70 minutes or until pastry is light golden brown and fruit
is bubbly and thickened.
Serve with whipped cream, if desired.
* One 16-ounce package of frozen mixed berries, not in juice, may be substituted
for the raspberries and blueberries.
