Peanut Butter and Jelly Cookie Bars

Ingredients:

  • 1 1/2 cup all-purpose flour
  • 1 stick butter cold
  • 1/2 cup sugar
  • 3/4 teaspoon baking powder
  • 1 egg slightly beaten
  • 1 teaspoon Madagascar Pure Vanilla Extract
  • 1 cup raspberry jam seedless
  • 1 (10 ounce) pkg peanut butter chips

Makes: Each cookie bar serves 1.

Heat oven to 375°F. Spray 9x13-inch baking pan with vegetable pan spray. Stir together flour, sugar, butter and baking powder.

With food processor fitted with steel blade, process mixture until it resembles coarse crumbs.

Add egg and vanilla blend well. Reserve 1/2 cup of mixture; press remaining mixture onto bottom of prepared pan.

Bake 10 minutes or until light golden brown. Spread jam over warm crust.

Top with 1 cup of peanut butter chips. Stir together reserved crumb mixture and remaining chips; sprinkle over top.

Bake 15-20 minutes or until lightly browned. Cool completely on non-stick cooling grid. Using cutter of choice cut out into shapes.

May also be cut into bars.
