Snowball Cookies

Tools:

  • Large mixing bowl
  • 14" x 20" Jumbo Aluminum Cookie Sheet
  • 14-1/2" x 20" Non-Stick Cooling Grid

Ingredients:

  • 1 cup Butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup confectioner's sugar
  • 1 egg
  • 1 tablespoon Vanilla
  • 2 1/2 - 3 cups Flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup toasted slivered almonds ground

Makes: Cookies serve 3-4 dozen.

Preheat oven to 350° F. In a large bowl, cream butter, granulated sugar and ½ cup confectioners sugar.

Add egg and vanilla. Stir in 2½ cups flour, baking powder and salt.

Add ground almonds to mixture. Mix thoroughly to form a stiff dough, adding additional flour if necessary.

Dip hand in confectioners' sugar and roll dough into 1" balls and place on ungreased cookie sheet.

Bake 12-15 minutes or until bottom edges are just beginning to brown. Remove from sheet and cool on wire rack.

Dust with confectioners' sugar.
