Spicy Corn Muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup yellow corn meal
  • 3 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon chili powder (optional)
  • 1 cup sour cream
  • 1/4 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup (4 ounces) shredded pepper Jack cheese
  • 1/2 cup canned or frozen corn, well drained
  • 1/2 cup canned black beans, rinsed and well drained
  • 1/2 cup chopped red bell peppers
  • 1 can (4 ounces) chopped green chilies, drained

Preheat oven to 375°F. Line muffin pan cavities with baking cups. In medium bowl, combine flour, corn meal, sugar, baking powder, salt and, if desired, chili powder. In a separate bowl, combine sour cream, oil and eggs; add to flour mixture and mix just until smooth. Gently fold in cheese, corn, beans, peppers and chilies. Pour batter into prepared pan. Bake 18-20 minutes or until golden brown. Turn out of pan. Serve warm.

Makes 18 muffins.
