Sponge Cupcakes
Ingredients:
- 7 eggs
- pinch salt
- 3/4 teaspoon cream of tartar
- 3/4 cup granulated sugar sifted
- Easy-Add pure vanilla extract Add to shopping list pure vanilla extract
- 1 cup cake flour sifted

Each cupcake serves 1.
Instructions:
Step 1
1. Set oven at 400°F.
Step 2
2. Separate eggs; beat egg yolks 1 minute.
Step 3
3. Add pinch of salt to egg whites; beat until foamy.
Step 4
4. Add cream of tartar and continue beating whites until they cling to bottom and sides of bowl, then beat 1 minute longer.
Step 5
5. Fold beaten egg yolks into egg whites gently but quickly.
Step 6
6. Fold in sifted sugar, flour and vanilla. Do not over mix.
Step 7
7. Pour batter into prepared pan, spreading evenly from center out with a spoon.
Step 8
8. Strike pan several times on table to break any air bubbles.
Step 9
9. Bake in center of oven 18 to 20 minutes or until cupccake springs back when touched lightly.
Step 10
10. Cool 10 minutes in pan on rack; remove and cool completely before decorating.
