Southwest Chicken Pizza
1 package (13.8 ounces) refrigerated pizza crust
2 cups (8 ounces) finely shredded Colby and Monterrey Jack cheese blend
2 cups (10 ounces) diced grilled chicken
1/2 small red pepper , diced
1 jalapeño peppers , seeded and sliced
1 can (10 ounces) whole kernel corn , drained
1 can (2.25 ounces) sliced black olives
1 tablespoon taco seasoning mix
chopped fresh cilantro
About 6 servings.
Preheat oven to 375ºF.
Unroll dough and stretch to fit bottom of pan. In large bowl, combine cheese, chicken, bell pepper, jalapeno pepper, corn, olives and seasoning; mix well. Sprinkle mixture evenly over crust.
Bake 16-18 minutes or until cheese is melted and bubbly. Serve pizza with salsa, sour cream and cilantro.
