Southwest Chicken Pizza

Ingredients

  • 1 package (13.8 ounces) refrigerated pizza crust
  • 2 cups (8 ounces) finely shredded Colby and Monterrey Jack cheese blend
  • 2 cups (10 ounces) diced grilled chicken
  • 1/2 small red pepper , diced
  • 1 jalapeño peppers , seeded and sliced
  • 1 can (10 ounces) whole kernel corn , drained
  • 1 can (2.25 ounces) sliced black olives
  • 1 tablespoon taco seasoning mix
  • Salsa
  • sour cream
  • chopped fresh cilantro

About 6 servings.

Instructions:

Step 1

Preheat oven to 375ºF.

Step 2

Unroll dough and stretch to fit bottom of pan. In large bowl, combine cheese, chicken, bell pepper, jalapeno pepper, corn, olives and seasoning; mix well. Sprinkle mixture evenly over crust.

Step 3

Bake 16-18 minutes or until cheese is melted and bubbly. Serve pizza with salsa, sour cream and cilantro.
