Ingredients:

  • 1 (about 3 lbs.) pork loin roast
  • salt and pepper to taste
  • 1/2 cup apricot preserves
  • 3 tablespoons butter
  • 1 tablespoon Dijon mustard
  • chopped fresh parsley

Makes:

About 8-12 servings.

Instructions:

Step 1

Preheat oven to 450°F. Place roast in rack. Season with salt and pepper. Place roast in oven and immediately turn oven temperature down to 325°F. Roast approximately 1-1/2 hours, or until thermometer inserted in thickest part of meat reads 165°F.

Step 2

Meanwhile, heat preserves, butter and mustard in small saucepan until mixture comes to a boil. Remove roast from oven; let stand 15 minutes. Brush roast with warm glaze. Garnish with parsley. Serve roast with remaining glaze.
