Pumpkin Chocolate Chip Mini Loaves
Ingredients:
- 1 cup (2 sticks) butter, softened
- 1-1/2 cups granulated sugar
- 4 eggs
- Easy-Add vanilla extract Add to shopping list vanilla extract
- 3 cups all purpose flour
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 tsp. ground allspice
- 1/4 tsp. ground nutmeg
- 1 cup solid pack pumpkin (NOT pumpkin pie filling)
- 3/4 cup semi-sweet chocolate chips
- Chocolate Glaze
- 1/2 cup semi-sweet chocolate chips
- 1 tbsp. butter
- 1 tbsp. water
- 1/4 cup sifted confectioners' sugar

Instructions:
Step 1
Preheat oven to 325°F. Spray pan lightly with vegetable pan spray.
Step 2
In small bowl, combine flour, baking powder, cinnamon, salt, allspice and nutmeg; set aside. In large bowl, cream butter and sugar with electric mixer until light and fluffy. Add eggs one at a time, mixing well after each addition; beat in vanilla. Add flour mixture alternately with pumpkin until well combined; mix in 3/4 cup of chocolate chips. Divide batter evenly between the four pan cavities.
Step 3
Bake 36-40 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan; remove to cooling rack to cool completely.
Step 4
For Chocolate Drizzle, combine chocolate chips, butter and water in small microwave-safe bowl; microwave at 75% power for 1 minute and stir. Continue microwaving at 15 second intervals until chips are completely melted. Stir in confectioners’ sugar. Drizzle over each cooled loaf.
